
Trung Hau Village in Dien Chau Commune has been known for years for its delicious grilled fish. It is easy to see dozens of fish grilling kilns placed on the two sides of the village’s main road.

Local residents used to come to beaches very early in the morning to buy fish. But now many households have built cold storage facilities at home to store fish.

Nguyen Thi Hoa from the village said that her work starts from the early morning and ends at 7 pm. Despite temperatures of up to 40 degrees centigrade, she still grills fish.

According to Hoa, a meticulous approach, skill and perseverance are needed for the work.

Nguyen Thi Huong, 38, who has a decade of experience in fish grilling said that each batch of fish is grilled for 10-30 minutes, depending on their weight. She earns VND200-250,000 per day thanks to the work.

It is important for grillers to flip the fish evenly. A delicious piece of grilled fish should have a fragrant aroma and a sweet and savoury taste, Huong added.

The grilled fish is usually sold to traders in Nghe An's Con Cuong, Que Phong, Tan Ky and Tuong Duong districts.
